    Soy sauce chicken is a Chinese dish traditionally made by cooking chicken in a savory soy sauce mixture until the skin turns brown and flavorful.

    Growing up, my mom always ordered soy sauce chicken from the Chinese takeaway across the street from our house, so I wanted to recreate those nostalgic flavors at home.

    At the takeaway shop, you usually get to pick your cut from the meats displayed behind a window. It's commonly served with steamed jasmine rice and sautéed cabbage as an affordable meal on the go.

    Air Fryer Soy Sauce Chicken

    I found that using a thick, molasses-based dark soy sauce gives the chicken its deep mahogany color and glossy coating as the marinade caramelizes under the air fryer's high heat.

    If you don't have an air fryer, try my stovetop soy sauce chicken recipe instead.

    Ingredients & Substitutes

    Exact ingredient amounts are listed in the recipe card at the bottom of this page.

    Air fryer soy sauce chicken ingredients with chicken thighs, soy sauces, oyster sauce, honey, sesame oil, Shaoxing wine, ginger, and seasonings.
    • Skin-On Chicken Thighs: Use bone-in thighs and debone them, leaving the skin intact. Skin-on boneless chicken thighs also work; simply skip the deboning step.
    • Toasted Sesame Seeds: If unavailable, toast raw sesame seeds in a dry pan until golden and fragrant.
    • Green Onions

    Chicken Marinade

    • Regular Soy Sauce: Use regular soy sauce for the best flavor. Light soy sauce also works. Low-sodium soy sauce can work but will result in a less salty sauce.
    • Dark Soy Sauce: Use a thick, molasses-based dark soy sauce for the deep mahogany color and glossy coating. I regularly use Pearl River Bridge Superior Dark Soy Sauce for this. Dark mushroom-flavored soy sauce also works.
    • Oyster Sauce: This adds umami. Vegetarian stir-fry sauce also works.
    • Honey: Use any unflavored liquid honey that you like.
    • Toasted Sesame Oil: Toasted is more flavorful than untoasted sesame oil.
    • Shaoxing Wine: Substitute with dry sherry or chicken broth for a non-alcoholic version.
    • Fresh Ginger
    • Garlic Powder: Use this instead of fresh garlic, which can scorch under the air fryer's high heat.
    • White Pepper: Black pepper also works.

    Note: Asian ingredients are typically available at most Asian grocery stores or online.

    Expert Tips

    • Trim excess skin and fat to reduce smoking from drippings in the air fryer.
    • Choose similar-sized chicken thighs so they cook evenly and finish around the same time.
    • Let excess marinade drip off to prevent the sugary marinade from pooling and scorching.
    • Cook the chicken skin-side up without flipping so the skin caramelizes undisturbed.

    Instructions

    Below are step-by-step instructions on how to make air fryer soy sauce chicken:

    1. Debone the chicken: Place the chicken thigh bone-side up on a cutting board. Use a sharp knife to carefully make shallow slits around the thigh bone until you can remove it completely without piercing the skin. Pat the chicken dry with paper towels.

    1. Marinate the chicken: Transfer the thighs to a large mixing bowl. Combine the chicken with the marinade ingredients and massage until evenly coated. Marinate for 15 minutes.

    1. Arrange the chicken: Lightly spray the air fryer basket with neutral oil. Alternatively, place air fryer parchment paper in the basket with the chicken for easier cleanup. Let any excess marinade drip off, then arrange the chicken skin-side up in a single layer with space between each piece.

    1. Air fry the chicken: Air fry at 375°F for 8-10 minutes without flipping, until the skin is caramelized and the thickest part of the chicken reaches 165°F.

    1. Rest and slice: Transfer the chicken to a clean cutting board and rest for 5 minutes. Slice into even strips and garnish with toasted sesame seeds and green onions.

    Storage & Reheating

    • Refrigerator: Store cooled chicken in an airtight container for up to 4 days.
    • Freezer: Freeze cooled chicken in a freezer-safe bag or container for up to 3 months. Thaw overnight in the refrigerator.
    • Reheating: Air fry at 350°F for about 5 minutes or microwave for 1-2 minutes until hot throughout.

    Variations

    • Gluten-Free Version: Use gluten-free soy sauces and gluten-free oyster sauce, and replace the Shaoxing wine with dry sherry or chicken broth.
    • Spicy Version: Add 1 teaspoon red pepper flakes to the marinade for extra heat.

    Pairing Suggestions

    Serve air fryer soy sauce chicken thighs with:

    • Egg Fried Rice: Savory fried rice soaks up the flavorful soy glaze.
    • Chinese Garlic Bok Choy: Tender-crisp greens balance the rich, savory chicken.
    • Egg Rolls: Crispy egg rolls add a crunchy contrast to the juicy chicken.

    FAQ

    Why did my soy sauce chicken burn in the air fryer?

    The honey and soy sauces contain sugars that can scorch at high temperatures. Keep the air fryer at 375°F and let excess marinade drip off before cooking.

    Can I make this with regular soy sauce only?

    Yes, but the chicken will be lighter in color and less glossy. Dark soy sauce gives the skin its deep mahogany color and glossy finish.

        Yes, but I would suggest reducing the air frying time to 6-8 minutes or until an internal temperature of 165 F with a digital thermometer or until juices run clear.

      My chicken didn't end up with gorgeous dark glaze yours has, although I used brown sugar - cook longer, change to honey, any suggestions. Would love for the resulting dish to look as good as yours.

        Thanks for sharing! Keep in mind that every air fryer is different in terms of heating so in your case I would suggest air frying for a bit longer until you get that dark colour.
