    Spicy smacked cucumber salad (aka spicy smashed cucumber salad, pai huang gua, 拍黄瓜) is a refreshing Chinese side dish made with smashed cucumbers tossed in a savory, tangy dressing. It originates from Sichuan, China, and is a staple dish in Sichuan cuisine.

    I make this often during the hot summer months when cucumbers are in peak season. It's especially great on busy weeknights when I need a fast vegetable side dish that doesn't require heating. I also make it ahead to enjoy cold with steamed rice and a protein.

    Spicy Smacked Cucumber Salad

    Over the years, I've made all sorts of cucumber salads, including my Spicy Asian Cucumber Salad or Kewpie Mayo Cucumber Salad. The key is salting the smashed cucumbers for 5-7 minutes to draw out excess water, keeping them crisp and helping the garlic chili dressing cling to every ridge instead of pooling at the bottom.

    Ingredients & Substitutes

    • Persian Cucumbers (mini cucumbers): Their thin skin and crisp, dense flesh are ideal for this salad with no peeling or seeding needed. English cucumber also works; scrape out the watery seeds first.
    • Salt: Draws out excess moisture from the cucumbers, helping them stay crunchy.

    Cucumber Dressing

    • Regular Soy Sauce: Light soy sauce also works. For a less salty option, use low-sodium soy sauce. Avoid dark soy sauce as it's too dark and thick for this salad.
    • Toasted Sesame Oil: This is more flavorful than untoasted sesame oil.
    • Chinese Black Vinegar: I prefer Chinkiang black vinegar for its balanced, fruity acidity and deeper flavor. Rice vinegar or apple cider vinegar also works.
    • Toasted Sesame Seeds: Black sesame seeds also work.
    • White Granulated Sugar: Balances out the savory notes.
    • Fresh Garlic: Finely mince it so it coats the smashed cucumbers evenly.
    • Chinese Chili Oil: Chili crisp also works. I prefer Lao Gan Ma for its savory notes, but use any chili oil you enjoy.

    Note: Asian ingredients are typically available at most Asian grocery stores or online.

    Expert Tips

    • Keep the knife flat when smashing the cucumbers for safer, more controlled pressure.
    • Don't skip the salting to remove excess moisture and keep the cucumbers crisp.
    • Drain the cucumbers thoroughly so excess water doesn't dilute the dressing.
    • Finely mince the garlic so it coats the smashed cucumbers more evenly.

    Instructions

    Below are step-by-step instructions on how to make spicy smacked cucumber salad:

    1. Smash the cucumbers: Slice off both ends of the cucumbers. Lay them flat and firmly smack them with the flat side of a knife until they crack open.

    Storage

    • Refrigerator: Store leftovers in an airtight container for up to 3 days. The cucumbers will soften and become saltier the longer they sit in the dressing.
    • Freezer: Do not freeze as the cucumbers will become watery and mushy once thawed.
    • Serving: Enjoy cold from the refrigerator and toss well before serving to redistribute the dressing.

    Variations

    • Gluten-Free: Use gluten-free soy sauce or tamari instead of regular soy sauce. Use rice vinegar instead of Chinese black vinegar. Check your chili oil to make sure it's gluten-free.
    • Mild Version: Reduce the chili oil or leave it out completely for a non-spicy cucumber salad.

    Serve Chinese spicy smacked cucumber salad with:

    • Egg Fried Rice: The mild, savory rice balances the spicy, tangy cucumber dressing.
    • Kung Pao Chicken: The cool, crisp cucumbers contrast with the warm, saucy chicken.

    Yes. For the best flavor and texture, make it a few hours ahead and refrigerate until serving. You can also make it the night before, but the cucumbers will become saltier the longer they sit in the dressing.

      Super easy and yummy, even though I made some substitution as I made do with what I had in my pantry: regular cucumber instead of mini, didn't salt the cucumber, just used them straight thinly sliced. Didn't have chili oil so used chirrata sauce and didn't add sugar since chirrata is already sweet.
      I added green onion cut thinly, and fresh steemed green beans cut in small pieces.

      So good! Love the crunchiness of the cucumbers and the sauce just is perfect. For fun I tried Trader Joe’s Japanese multipurpose seasoning that has black and white sesame seeds, nori and kelp powder in, and it was also really great with these smashed cucumbers.

      Not just this recipe, but I think I am going to enjoy you. I was a prairie meat & potatoes guy (and miss meat so much) I have a young E.Indian lad living in my home (I cook-he manages my property). Some of their spices are too strong for me - I love curry's. As I grew up, it was Chinese, Italian, Greek, eventually Thai etc - Indian is great - just not every day. Nick will eat chicken (protein need) but I yearn for a ribeye - just don't want to cook two dinners. I think your Kung Pao Chicken with rice will suit us both, this as a side dish - sounds really good to me. I will follow your other dishes. Sorry for my entire history - HaHa!
