I will never forget trying crispy crab rangoons for the first time with my husband. We instantly loved the crispy texture and velvety crab filling. I couldn't stop at one - they were so good I nearly finished the whole plate (sorry, husband!).
But my biggest issue with restaurant versions is there's never enough crab meat! Isn't that the point of a crab rangoon? My version uses a balanced crab-to-cream-cheese ratio, so every bite has plenty of sweet crab flavor instead of tasting like a cream cheese wonton.

- Vegetable Oil: Use a neutral, high-smoke-point oil for frying. (Sub: Canola oil or avocado oil)
Crab Rangoon Filling
- Crab Meat: I prefer using imitation crab as it tastes less fishy, but well-drained canned crab also works; press it firmly to remove excess moisture before mixing.
- Plain Cream Cheese: Use room-temperature regular brick cream cheese for a smooth, sturdy filling. Light cream cheese works but has more moisture and melts faster in hot oil.
- Green Onions: Finely chop so they distribute evenly throughout the filling.
- Regular Soy Sauce: You can also use low-sodium or light soy sauce.
- Worcestershire Sauce: Adds a little tang to balance the creamy filling. (Sub: A1 Original Sauce)
- Garlic Powder: Blends evenly into the filling without the raw pieces fresh garlic can leave.
- White Granulated Sugar
- Black Pepper: You can also substitute with white pepper.
Instructions
Below are step-by-step instructions on how to make crab rangoon:
Method 1: Deep-Frying Crab Rangoon

- Mix the Filling: Combine the softened cream cheese, crab meat, finely chopped green onions, soy sauce, Worcestershire sauce, garlic powder, sugar, and black pepper. Mix with a fork until well combined.

- Portion and Dampen: Prepare a small bowl of cold water and place it nearby. Lay one wonton wrapper flat on a clean surface and spoon 2 teaspoons of filling into the center, keeping the edges clear. Dip your finger in the water and lightly trace all 4 edges of the wrapper.

- Pinch the Center: Bring 2 opposite corners together over the filling and pinch them firmly to seal.

- Seal the Seams: Bring the remaining 2 corners to the center and press all the seams firmly together, removing any trapped air as you seal.

- Fry Until Golden: Heat the vegetable oil to 325°F. Fry 6 to 7 wontons at a time for 1 1⁄2 to 2 minutes, flipping halfway through, until golden and crisp. Keep the oil between 325°F and 350°F between batches.

- Drain and Cool: Lift the wontons from the oil with a slotted spoon, letting excess oil drain off. Transfer them to a wire rack and let them cool for a few minutes. Serve with sweet chili sauce or plum sauce.
Method 2: Air Fryer Crab Rangoon
Lightly spray the air fryer basket with oil and preheat to 350°F. Arrange the filled wontons in a single layer with space between them, lightly spray the tops with oil, and cook for 6 to 8 minutes until golden brown and crisp.

How much is enough oil spray for the air fryer? I’ve only just sprayed the food when it was heated, not the inside before hand.

Thanks for flagging this, I've revised the recipe card to indicate how much oil is needed. I would suggest using 1-2 tbsps or as needed to evenly spray the rangoons on the outside only.

Thank you so much for making my recipe! It's most likely due to the the way it was folded. When folded like a triangle, the middle part is much larger than the traditional way of folding them and has less edges. Therefore, it'll take longer for the air fryer to make it crispier. Also it's important to note that each air fryer appliance is made differently so I would suggest adding a couple more minutes until the skin of the middle is bubbled and golden brown.

The recipe is really spot on. It said it made 18 and I got 19 out of it. I did use fresh crab meat legs that I picked the meat apart myself. Time consuming but worth it. I just used a very small amount of sesame oil because it is very strong and can overpower the crab taste. I did not have green onions, so I used Chives and it worked better I think because it is a milder taste and you can control the usage better. All in all, great tasting Crab Rangoon just like a Chinese Restaurant. I used Sweet Chili Sauce and Sweet Duck Sauce for dipping so friends can decided heat or no heat,
