I love making this takeout favorite at home because it easily saves me $20 over ordering it from a restaurant, and the leftovers are great for meal prep throughout the week.

Stir-Fry Sauce
- Chicken Stock: Use low-sodium chicken stock to control the saltiness. Low-sodium beef stock also works.
- Garlic Cloves: Freshly minced garlic is best, but jarred minced garlic also works.
- Oyster Sauce: Vegetarian stir-fry sauce also works.
- Dark Soy Sauce: I prefer Pearl River Bridge Superior Dark Soy Sauce for its thick consistency and deep color. Dark mushroom soy sauce also works.
- Shaoxing Wine: Dry sherry is the best substitute. Dry white wine also works.
- Cornstarch: Thickens the sauce. Potato starch also works.
- White Granulated Sugar
- Toasted Sesame Oil: Use toasted sesame oil, which has a stronger flavor than untoasted sesame oil.

- Cut the beef: Slice the beef against the grain at a 45-degree angle into ¼-inch-thick strips. Transfer to a large bowl. Tip: For easier slicing, freeze the beef uncovered for 45 minutes to slightly firm it up.

- Marinate the beef: Toss the sliced beef with the marinade ingredients until evenly coated. Let sit for 15-20 minutes.

- Prepare the sauce: In a small bowl, whisk the stir-fry sauce ingredients until well combined and the sugar has fully dissolved. Set aside.

- Sear the beef: Heat the vegetable oil in a large pan over medium heat. Once hot, add the beef in a single layer and cook for 4-5 minutes in total, flipping over halfway, until lightly browned on the edges and just cooked through. Remove and set aside.

- Cook the vegetables: Add the onions and mushrooms to the pan in an even layer and cook until slightly softened, about 2-3 minutes.

- Finish the dish: Re-whisk the sauce, then pour it into the pan and simmer for about 30 seconds until slightly thickened. Return the beef to the pan with the green onions. Toss for about 30 seconds until evenly coated and warmed through. Remove from heat and serve immediately.

- Refrigerator: Store leftovers in an airtight container for up to 4 days.
- Freezer: Freeze cooled leftovers in a freezer-safe container for up to 3 months. The mushrooms will have a softer texture after freezing and thawing. Thaw overnight in the refrigerator before reheating.

Made this for dinner tonight! It was absolutely delicious. I would make 2 small tweaks for personal preference. I would only put a small sprinkle of baking soda because it was a little gritty as you warned when I cooked the beef after marinating. Don't you rinse the baking soda off the meat before cooking?

No need for that since we're using such a small amount that you can't taste it. Also if you wash it off with the other marinade ingredients, the meat won't velvet properly.
